A really fun and exciting beer made in collaboration with Smith Street Taps for their 7th year anniversary. This IPA is nothing like we’ve ever drank or made before. Encouraged by the pioneering team behind Smith Street Taps, we concocted a seemingly incoherent yeast blend using 2 yeasts which are complete polar opposites of one another - 70% blend of a yeast which ferments crisp and clean, and 30% with a yeast known to produce beers with a fruity and slightly sweet profile. An eclectic mix of hops was chosen - Jester for bittering, Azacca and Riwaka for aroma. A judicious amount of restraint was applied when deciding the hop dosage; just about right to deliver a sublimely hoppy IPA in perfect harmony with the malt and yeast profile.
