Despite the unfortunate series of events leading up to that meeting, a Saturday morning in December 2018 found us brewing with friends from Tula. It’s more than a little symbolic that two names met that day: Bakunin (Mikhail Aleksandrovich) and Peter Petrovich (Belousov). They were both thinkers and practitioners, scholars and husbands, fascinated by culture and science. When these kind of stars aline, we can’t just not team up for even an unassuming craft variety – in the end we chose to use the strain Saccharomyces Bruxellensis Trois. It’s long been considered too wild but it responded well to being cultured, proving most brewers wrong. Yeast is a being all its own, showing once again how often we don’t know the true shape of a thing and approach it with our preconceptions and prejudices instead. Following this line of thought we had the idea for a new spin on the NE IPA, with added oatmeal flakes. We used the classic El Dorado and Galaxy duet, along with Mosaic lupulin to add a greater hop sensibility to the cocktail. Despite everything it turned out to be a tropical juice, calling to mind summer mornings spent in parks on the holidays.
