A new experiment opened up by advances in cryogenic hops processing – our new brew was hopped with Simcoe, an example of lupulin pollen, giving it the ultimate citrus-pine aroma without upping the bitterness. To make the flavour as smooth as possible, we used wheat malt and fermented it with a classic New England strain of yeast from Vermont.
