"This beer was inspired by an afternoon spent by the water’s edge on Eriska. From the moment of arrival, the shore had a magnetic draw and on a foraging trip, sampling some of the sea kelp often harvested by the chef, I was reminded of an idea floated by one of my colleagues a short time ago for a combination of seaweed and fennel in a beer. Since both were found in close proximity on the island the concept seemed to further insinuate itself and I chose the classically salted Saxon style Gose as the best vehicle to showcase these flavours.
