"The process of increasing the rate of a chemical reaction by adding a substance known as a catalyst." Our Catalyst series will be an ongoing tribute to our love of cocktails. South Florida is rich in cocktail history and we sought to put our own spin on the classic mojito. We started with a pineapple mead base that was fermented with a yeast strain selected to amplify tropical flavor notes. Post-fermentation, we added sugarcane and fresh mint. Salud!
