Monatomic Blueberry showcases the unique Cascade Mountain Wild blueberry. This particular varietal is grown at an elevation of 5,000ft and is best know for it's full-bodied tartness with sweet undertones and thick skins. FL Galberry honey was utilized for it's mild citrus and molasses undertones to target depth and complexity. Post-fermentation, this project was transferred to one of the most beautiful botanical forward freshly dumped Gin barrels from Koval (Chicago, IL). Small format aging for 2.5 months resulting in a luscious mouthfeel and a finishing touch of spice and citrus zest sweetness.
