Barrel 58 is an unique project where only self harvested fruits were added to straight to a barrel of Wild West, more specific barrel 58. This barrel (French oak, made in 2012) was used for St-Emilionwine (Chateau La Croizillé) before. We added Schaarbeekse krieken (Neerbeek, Belgium), sloeberries (Bottelare, Belgium), jostaberries (Schoorisse, Belgium), raspberries (Bottelare, Belgium), gooseberries (Tielt, Belgium) and bilberries (Simonsidehills Northtumberland, UK). Fermented with our own wild house yeast strain 'Morpheus'.
