100% spontaneous beer with grapes. Ka is a perpetua that is renewed with subsequent additions of spontaneous beer wort from coolship. This one was aged for 18 months in stainless steel and then aged on fresh grape pomace (spent grapes) of sangiovese (red) and trebbiano (white) varieties, coming from our wine makings. No added microorganism, no brett/wild yeast/bacteria/sour pitch. fermentation is 100% spontaneous
