SOUR AGED SPICED RUSTIC ALE - sourness is just spontaneous. no brett nor bacteria were added - Unblended aged version of Cantina Errante Saison 2019, that spontaneously soured in local ex-wine oak barrels. The "Bicchierino Method" was used to elevate the beer during ageing. Then we foraged juniper berries and added them a couple of weeks before the packaging. The wort was made out of local organic barley malt and local organic wheat of an evolutive population, composed by about 2000 ancient varieties.
