Oak-Aged Wild Ale Going into our off-site barrel storage spot feels like that scene at the end of Raiders of the Lost Ark. The infamous box is wheeled into a vast warehouse among canyons of similar crates, hinting at unknown wonders waiting to be discovered. Each time we pull a single barrel to serve in the taproom, it feels kind of like that. Each expression is a culmination of what that barrel has to offer. Time, wood, fermentation…the alchemy of barrel aging. This particular release was aged 20 months in oak on our house culture then conditioned for several more months on four different varietals of pluots. Notes of Juicy Fruit Gum, Overripe Peach and Meyer Lemon
