AMERICA! Named in honor of astrophysicist and Twitter hero Neil deGrasse Tyson, this beer is a unique version of our Rocket Science IPA. It's a clone of Rocket Science (same hops, grain, and water), but with one key change: we used a different yeast. By subbing Saccharomyces "Bruxellensis" Trois for the traditional American Ale yeast -- yet keeping everything else the same -- Neil deBruxe Tyson is remarkably different from the control beer. Enjoy the fruity, tropical nose and a touch of wild Brett. On the palate, the aroma gives way to a more complex flavor profile of pineapple and mildly funky mango, with a lot less pine-and-grapefruit associated with Rocket Science. Oh, and the Bruxe Trois yeast changes the mouthfeel: it's a slightly drier beer, with less perceived sweetness. Try them side-by-side. And if your name is Neil deGrasse Tyson, come on over!
