We’ve long wanted to do a series of single hop beers that showcase what each variety is like in its purest form and what better way to do that than in a crisp, 100% local malt pilsner. We are using healthy amounts of hops here, so these will be hop forward, i.e Hoppy Pilsners. For this go around, we chose Mosaic both for the bittering hops and for the dry hop. You’ll probably recognize Mosaic, as it’s one of the hops used in Rocket Science. Here, standing on its own, you’ll get notes of blueberry, rose petal, and spice.
