Inspired by the first non-indigenous settler of what would become Chicago; French-Haitian pioneer, Jean Baptiste Point du Sable. We combined French strong ale and classic American lager using red flint corn as a unifying ingredient for a style we're calling Bière de Maïs. Flint corn is an older variety of corn that was a staple to Haitian and colonial Midwest diets alike and is still widely grown in Haiti today. The result is a clean, fruity, strong ale with a pronounced corny malt profile and low bitterness. It's a melting pot of classic styles that produce a fresh but familiar new beer.
