Each batch of the Albert's BINO series is a unique experiment. BINO #07 Forgotten Child is a Flanders Red Ale fermented in French oak barrels and conditioned on cherries. Albert's buddy Alan Wong shared some bottles of Digioia-Royer Bourgogne Hautes-Côtes de Nuits 2012 to rejuvenate the French oak barrels before loading in the biscuity red ale wort. It's then fermented with the Roeselare ale blend for 12 months to bring out its sherry-like characters. The beer was further conditioned on the French oak with a blend of Montmorency tart and sweet cherries for 3 more months to add on complex layer of fruity characters. Drinks like an elegant natural wine with very low levels of farmhouse funky characters and finishes off-dry.
