Collaboration with Hong Kong Craft Beer Co. and HK Brewcraft Bor Yea Bor Lor Yin 2022 is a smoked pineapple farmhouse ale. We came up with this is idea while drinking Alvinne brewery's Phi Smoked Pineapple. We loaded kettle-soured wort into two barrels with our house culture and pitched one of them with a Saison strain and the other one with a Brett-focused blend. We then blended the two batches with applewood-smoked pineapples to condition in a stainless tank before bottling. The result is a complex and well-balanced beer, featuring funky, umami, woody characters paired with intense smokiness and fruitiness. The whimsical aromas follow through with slightly savoury and peaty characters on the palate.
