We aged our ‘Goblin Cleaver’ Imperial Stout in a 64l Oloroso sherry barrel (known as an octave), which had previously held peated Islay whisky (Caol Ila). Barrels of this size impart flavour much faster than more common 200-220l oak casks, due to the increased ratio of wood surface area to beer. As a result, this beer had gained a wealth of character after only four months in barrel. Expect decadent notes of sherry, smoke and rich dark chocolate. Bottle conditioned. 168 bottles only.
