The first in our "One Hop Policy" series of beers puts the spotlight on Nelson Sauvin, a hop grown in New Zealand whose name derives from the Sauvignon Blanc grape. Most IPAs use several aroma and bittering hops to create a distinctive hoppy blend, but by limiting ourselves to just one hop at a time, we can allow the drinker to experience the flavor of that particular hop in isolation and better appreciate its unique character.
