Travelling down the history lane can take you strange and beautiful places. We first dreamt of this kind of beer back in the day, when mighty Orval was all we were thinking about. Time passed, beers were brewed, but the idea of making an Orval inspired brew was always somewhere here. The beer itself is an odd one – Belgian Pale Ale, clearly inspired by the British ales (hence the use of British hops and neutral ale yeast), with added wild Brettanomyces yeast (well, the name of the yeast makes little space for guessing its origin). Is it actually a historic British pale ale, which was often aged in wooden vats and transformed by the Brettanomyces yeast during long maturation process? It is now hard to answer these questions, but our path is clear now – we were going to make a historic British pale ale. We brewed this one with a touch of caramel malt for that beautiful colour and biscuity taste, classical British hops for authenticity, and then left the familiar path and aged it not with one strain of wild yeast, but with a blend of Belgian lambic yeast. So here things started to get interesting. Our little pale ale went wild, weird, slightly sour and impossibly thirst quenching. This is a beer of many characters, shades of taste and stories to tell.
