Tom Oliver makes cider and perry in small batches, using fresh pressed cider apples and perry pears, spontaneously fermented by wild yeasts. Barleycorn & Appleseed was made by co-fermenting a rich barleywine wort with a blend of juice from bittersweet apples and cider lees in old oak whisky casks for 15 months.
