This is the second edition of our honey-fermented Bière de Miel. Okay was made from a blend of two deep golden worts produced in the Novembers of 2019 and 2020. The grist contained caramelised and toasted malts, to complement the aromatics of the honey. Fermentation took place in four old white Burgundy barrels for just shy of two and three years respectively. The barrels selected were those providing noticeable perceived sweetness, to enhance the perception of the honey, along with a balancing acidity. Raw Scottish heather honey from Heather Hills Farm was added just prior to bottling. This provided sugar for conditioning as well as trapping the delicate earthy aromatics in the bottle.
