De hecho, ¡la idea de mezclar piñas con nuestra IPA vino a mí cuando me comía unos tacos al pastor con una Guerrero! Poco después embotellamos El Arrecife. Comenzando con nuestra receta de Guerrero, seleccionamos a mano las piñas más aromáticas y dulces cosechadas en la región. En lugar de endulzar la cerveza, utilizamos suficientes piñas para resaltar bellamente el lúpulo Citra. ------ Pineapples have a long history as part of the Yucatan region. The Maya recognized pineapples as an important nutrient source and subsequently farmed them for food. Today they grow inland on farms or wild across the tropical coastlines. They remain deeply rooted into the Yucatan cuisine. In fact, the idea of mixing pineapples with our IPA first came to me as I was enjoying al pastor tacos with a Warrior! Shortly thereafter, El Arrecife was bottled. Starting with our Warrior recipe, we hand select only the sweetest smelling locally harvested pineapples. Rather than sweeten the beer, we use just enough pineapples to beautifully highlight the Citra hops.
