Peralta-ish is a very special beer to us, being based on the Peralta Porter recipe from Santa Clara Valley Brewing and brewed with their old owner/brewer, Steve Donohue. We took his recipe, added some oats to the mash for a little more body and a slightly elevated abv, and then dosed it on the cold side post-fermentation with 200#s of toasted coconut along with a small amount of grade A Madagascar vanilla beans and TCHO cacao nibs from Ghana. The result is a beautifully balanced porter with notes of coconut, coffee, chocolate in a very drinkable 6.6% package.
