For our most heavily adjuncted beers we literally cram a tank with coconut, vanilla and whatever else we believe could elevate the experience even further. The beer then sits and slowly soaks up as much character as possible before it goes through our packaging process.
What’s left behind is a tank full of coconut, vanilla and other adjuncts holding onto just a few impossibly thick drops of beer trapped deep inside the mixture. Watching those precious drops disappear has always felt a little tragic, but through trial and error we discovered that if we let the tank rest for another week or two we can sometimes coax some of that liquid back out.
What emerges is something different. Even more rich and intense, concentrated. A tiny hidden afterlife of the beer.
Until now this is something we have mostly kept to ourselves at the brewery.
This keg marks the first time we are sharing it publicly.
We have chosen to call it BREWERS RESERVE.
