Cimarron "Imperial Brown" is our most recent collaboration with Cerveza Cerros de Chena, our brewing brothers from Chile with whom we share the same passion and love for good beer. This beer is inspired by the concept of the Cimarron, the escaped slave who is on the run. In our modern days, Cimarron are all those who in one way or another seek to break out and escape from some current condition/state whether comfort, security, or anything else that society decides for us, to enter the world of diverse experiences, the new and the unknown. The Cimarron of our times is not satisfied with a degree, a title or a position, it's in constant search, goes beyond the limits, is reinvented and evolves and is truly free. The design of the recipe for this beer is based on an American Brown Ale. However, it has much more hops, more malt, more alcohol and more flavors than a brown ale, that's why the qualifier of Imperial. The bitterness and aroma of hops are protagonist and in turn are complemented by the contribution of flavors of caramel, chocolate, dates and dried fruits by the malts to create a complexity of exquisite flavors on the palate. In addition we use oats to achieve the soft texture that characterizes this beer and brown sugar that contributes that particular Puerto Rican raw sweetness.
