WINE SIDE STORY- We barrel aged our saison in mulberry wine barrels on the verduc wine lees at Klinec winery in Medana. Klinec is fermenting all of his wine with wild (indigenous) yeast. Medana Incubo refermented in the barrel with indigenous microflora and developed just the right amount of funk. A great wine-beer hybrid, really showing the Medana terroir.
