A stand-alone recipe was brewed on our RnD which was primary fermented with Chardonnay Lees from Flowers Winery. After fermentation, the beer barrel aged for close to a year before being blended with Sonambic (SO03). The Sonambic makes up 20% of the blend. At bottling, we bottle conditioned this unique beer with a year called Rockpile. Rockpile is a native Sonoma County yeast that was originally cultured locally from a spontaneous Syrah fermentation. Now Rockpile is available for purchase and us often used in fermentation by local wineries and we on occasion use it for bottle conditioning.
