Salud (hello in French) is an oak-aged saison Vidal Blanc Grapes & Peaches. Salud crosses the boundary between natural wine and Missouri Saison. In the process of orange wine, we aged a Missouri Table Saison on the skins of Vidal Blanc grapes letting the natural microflora of the grapes to influence the direction of the beer. At maturity in oak, a Missouri Saison aged on Peaches was blended in before letting the beer condition in the bottle for several months.
