This fruited tart beer is a blend of two wild fermented, barrel aged beers. One barrel was aged for four years then topped up with local raspberries, and the second was aged for three years then refermented with Franschhoek Shiraz for a year. The result is a bright, Berry and fruit flavour, layered on top of a funky barnyard, tart character. This technique of aged wild, sour beer with fruit is a Belgian brewing tradition that we’ve adopted using local ingredients. The fruit sweetness compliments the tartness and complexity perfectly.
