One of 3 Christmas barrel aged fruited sour releases. This raspberry sour was aged for 12 months in red wine barrels and then conditioned in bottle for 6 months. A blush rose colour complements the rich raspberry bouquet on the nose. The flavour is a mix of fruit and complex sour notes intensified by the Himalayan rock salt addition. A very light carbonation adds life to the finish. Pair with hard cheeses such as Gouda or white meats / fish.
