Petit Mutant is an American Sour Ale fermented entirely with a willd yeast known as Brettanoyces Bruxellensis. It was brewed with German Pilsner malt and American Cascade hops. It is re-fermented with over 3000 pounds of Vermont grown Montmorency cherries grown by Allenholm Farm in South Hero. There is over a pound of cherries in every bottle of this beer. All of the whole cherries add a unique profile of almond and cherry pie. The end result is an extremely dense cherry character that plays off the rustic esters produced by the unique strain of yeast. For the fourth year in a row, we have blended a small portion of bacteria soured, barrel aged Petit back into the final bottling blend. The intent was to add a different dimension to the overall sour character of the beer, while still retaining all of the juiciness of the fruit. this bottle is unpasteurized and still contains live yeast and a full range of souring bacteria. You may notice the formation of a small pellicle on the surface of the beer; this is expected and an indicator of further flavor development. This beer has been aged to perfection over the last 15 months and is ready to drink immediately. The cherry character is intense and juicy and will only diminish with time.
