Fruit Dart is a Blackberry, Lemon and Vanilla Sour, and is a new take on the style for us. We kept the blackberry fruiting rate high, but complimented it with 10kg of lemon zest providing really smooth citrus flavour without the added acidity. Lastly, we used just enough vanilla to provide some perceived sweetness. The whole thing came together like a blackberry pie filling and we're super happy with it.
