CHUNK is a special project that began all the way up in Toronto with our good friends at Bellwoods Brewing. After falling in love with the base Imperial Stout recipe we crafted together at Bellwoods, we were eager to recreate it at our home base. Once brewed, we added the beer into the same type of Chocolate Malted Rye Woodford Reserve Master’s Collection barrels in which Bellwoods aged their version. After 30 months in these barrels, we rested the beer on a blend of cacao nibs and Madagascan vanilla beans, creating a Colorado identical twin version of its Canadian sister beer!
