In 2011 we established our “Zymatore Project”, a center of innovation and research around our world-class breweries to completely redefine the conventional boundaries between beer, wine, sake, mead, and spirits. Using wooden barrels of some of the most eccentric new winemakers/distilleries around the globe that are considered “trailblazers” in their industry we now age some of our most spectacular world-classic brews until each barrel/brew pair reaches its highest level of flavor/aroma complexity. We are proud to have the world’s only vintage portfolio of beers, cider, sake, and mead. Created in 1996 we are storing between 100 and 250 cases of each vintage in our vintage cellar environment for release some 3-10 years later.
