"Entomb Batch II was aged for significantly longer in the terracotta amphora than Batch I in an attempt to see how the flavour from the Amphora would develop over a longer time period. Being the second fill, the beeswax lining had also deteriorated slightly, so the contact with the terracotta was more intense than Batch I which displayed notes of honey, and a very clean finish, with minimal yeast character. Batch II has a much more pronounced, bright, citrus acidity, which is followed by a long, earthy minerality, sea breeze, and a dry, but moreish finish. We think this beer reminds us of the sea air, and displays unique umami flavours from the terracotta , and it would pair well with white fish, with capers, or fresh oysters."
