Freshly handpicked sour blackcherries of Tuscan almost extint ancient variety Gambolungo, infused for a couple of weeks in the blend of two barrel aged beers. First beer is a natural kettle sour beer (the lactic bacteria are those naturally living on the malt - Super Santos Method) aged in oak barrel. Second beer is Blendone, a perpetua monster living in the dungeon of our Cantina, fed with our special process called Governo alla Bicchierino. No brett nor bacteria were added, sourness is just spontaneous.
