Carob colored with red highlights and fine bubbles. The modest head is cream in color. A symphony of toasted and cereal aromas fill the nose, evoking the crust of country bread, cocoa, hazelnut and chestnut. There is a vague trace of red fruit. Also hints of cinammon and organic flavors. The first taste comes on sweet, light and gentle with a marked acidity in contrast to the toasted flavors. The mouthfeel is both creamy and light. The lingering aromas stand out boldly – smoke and brine (sea salt) recall the peaty moors of Scotland.
