This golden sour beer was fermented with a mixed culture in a small stainless steel tank for six months and bottle conditioned for a further three months. As such, Riddle Of Steel represents our longest aged non-barrel beer release so far. We picked this small batch for its own release as it presents exceptional aged character, having developed a juicy sweetness, balanced by a delicate acidity and funk. The bottle conditioning allowed the Brettanomyces yeast to gradually carbonate the beer, providing a thick lasting foam, and amplified yeast character. Completely unhopped and unfruited.
