Our second experiment brewing with the key ingredients of Baijiu, China's national spirit. We've included red sorghum in the grain bill and then kettle soured the wort with the fermentation agent used in Baijiu production called Qu, from Inner Mongolia. After finishing fermentation with an estery Belgian yeast, the end result is a mildly sour, sessionable, and intriguing take on Baijiu beer.
