Nature works on its own time… After two unsuccessful attempts at propagating a special strain of Brettanomyces Claussenii (aka Brett Claus) on this HomeGrown Chicago Brew, the third time was the charm. The result is a wild ale, fermented with our house ale yeast, then finished with Brett for that funky barnyard-ish aroma. Give it a try!
