Пиво Bootleg - Town Brewery

Bootleg DIPA is a snappy hop bomb with big flavours of pineapple from the heavy handed dose of El Dorado, as well as some really interesting lemon, lime and melon vibes from the supporting cast of Cashmere and Belma. We tried something a little different with this DIPA; we mashed low and used a higher attenuating yeast to see if we could get all the hop flavour without all the residual sugar and sweetness. We found that it helped to accentuate ripe, pithy fruit flavours from the hops rather than the sweet, bruised-fruit vibes you can sometime get form these big boozy beers. There's still no real bitterness to speak of, but you get all of the hop, less of the sweet. Enjoy!
