The sky’s growing darker every day, so we decided to brew something up with a dollop of sunlight: a life-affirming stout with a litre of berry juice. We threw in a generous portion of lactose to keep things bright, along with dark malts for a deep, pleasant colour. A handful of oat flakes soften and strengthen chocolate-milk taste, and we added cherry nectar during pre-fermentation to up the juiciness. Which adds up to a noticeably sour base with a full, peely shade of tart – making for a dense brew gushing with fruit.
