Brewer's Notes: Persession is a rejuvenating sessionable saison brewed with 120lbs of foraged persimmons. On the nose this beer expressed a pronounced fruit character reminiscent of oranges and persimmons. These fruity aromas are married with earthy and mildly clove-like aromas from the yeast. All of these fragrances are amplified on the palate and paired with a refreshing bitterness and a crisp dry body.
