bottling date: 22-11-2021 • bottle count: 238 For this small batch Aardbei, we macerated local strawberries with 57% three-year old and 43% two-year old lambik, originating from two different barrels and from seven different brews. We macerated for a few weeks and let the fruit lambik sit for almost another six months on a barrel to further mature. The weighted average age is thus more than 25 months. The three-year old lambikken were brewed with the first ever Pajot-grown cereals. NL 3 Fonteinen Aardbei wordt bekomen door de maceratie van handgeplukte aardbeien op jonge traditionele lambik. Natuurlijk fruit, zonder toevoeging van sappen, siropen, of suikers. Ongefilterd en ongepasteuriseerd. FR 3 Fonteinen Aardbei est le résultat de la macération de fraises entières, cueillies à la main, dans du jeune lambic traditionnel. Du fruit naturel, sans jus, sirops ou sucres ajoutés. Non-filtré et non pasteurisé. EN 3 Fonteinen Aardbei is obtained by the maceration of hand-picked strawberries on young traditional lambic. Natural fruit, without the addition of juices, syrups, or sugars. Unfiltered and unpasteurized.
