Blend n° 2 • bottling date: 18/11/2021 • bottle count: 84 For this Speling, we macerated sweet-berry honeysuckle (honeyberry) on two-year old lambikken from six different brews. Maceration time was almost five months. We balanced this subtle sweet berry lambic with three-year old lambik. The proportion of the three-year old lambik is 60% vs 40% of the two-year old. The weighted average age of this limited blend is 30 months, and the final fruit intensity is 282 grams of honeysuckle per litre of finished fruit lambic.
