Blend n° 65 • bottling date: 16/04/2020 • bottle count: 134 In the seventies, a lot of heirloom apple, plum, pear varieties – typically sour and bitter with great stewing characteristics - made way for sweet fruits which were economically more interesting because easier to pick and because of a sweeter taste. Belgium has unfortunately lost a rich history and tradition of cultivating more than 200 of such heirloom varieties. Luckily, now and then, one finds some hidden gems – small places owned by amateur farmers that invest in making old varieties survive. Quince, or kweepeer in Dutch, is such a fruit. This lemon-like big pear, of which more than 50 varieties exist, is spread across Flanders. We found some 80 kilos spread over the Pajottenland for this batch. We macerated them for six months on an oak barrel. Furthermore, we bottled it straight from the barrel. Consequently, the final fruit intensity is still 667 grams of kweepeer per litre. 100% 3 Fonteinen.
