The Fortified Lambik project is inspired by the sherry craft culture. We made two iterations of these, as it exists in the south of Spain as well. First, we had very old Lambik distilled by De Cort Distillery. For one version, we used this spirit to fortify a one-year-old lambik to 13.5% ABV. We let it sit for another year on a freshly emptied Palo Cortado barrel. This refers to the sherries that still evolve "sous voile" (under the veil) For the second version, we fortified a two-year-old lambik to 17.5% and let it sit on a freshly emptied Oloroso barrel, aiming for a more oxidative elevation. Only a portion of each barrel was bottled, and the barrels will be filled again in to create a solera system. With this project, we would like to create new flavours, based on traditional lambik, by combining our craft with methods from other high-quality wine types.
