As chaos and disorder reign, we wanted to design a series that stood on the brink of entropy and celebrated the subtle beauty of barrel aged stouts. In Approaching Entropy: 001 our brewers selected their favorite barrels over the past six months and set some of each aside to create a blend from roughly 20 distinct barrels. What’s created from these various selections is a melange of roasted coffee, dark chocolate, bing cherries, vanilla bean, and brûléed sugar.⠀
