Over the last three decades, the IPA has gone from niche to respectably mainstream to a near monopoly. IPAs alone account for more than a quarter of craft beer volume. IPAs weren’t so drinkable a couple of years ago, 100 IBU, super bitter. Today “nobody” cares about IBU. All we care about is flavour and we, plain and simple, love hops. Maybe as much as the mythical Hop Hog. So, as long as the hop hogs fly, we will keep on brewing IPAs.
