A Berlinerweisse with an extra shot of tart! Most of us are unaccustomed to tasting rhubarb without another fruit used to sweeten it. Now’s our chance. Like a traditional Berlinerweisse, this beer is effervescent and slightly sour from the work of a dose of lactobacillus added before the boil. The addition of rhubarb in the fermenters further puckers and freshens the taste and dries out the finish substantially. You'll sense the malt bill on the nose and retro-nasally after you sip, but the sip itself is all tart. It makes us think that if we eat straight-up rhubarb next spring, it’ll taste like a very dry lemon or grapefruit. Have fun analyzing this one!
