Triple Pastry Sour Ale with lime, pineapple, passion fruit, banana, blue spirulina algae, and vanilla With the beer Tropical Space Muffin - if we can still call it a beer- we have aimed for an intense tropical experience and to reach that we ended up adding so much stuff the ABV hit 11,5%. It's pretty intense now. We were always in this ambiguous relationship with pineapple. We wished we could find a way to work with it but the fermentation profile was so far from the fresh fruit. And we didn't want to use pineapple aromas to enhance that. Instead, we tried to work with a fruit combination that leaves pineapple as the star of this beer.
